{Favorite Fridays} Pina Colada Cheesecake & Pound Cake Recipes.




I wanted to share two of my favorite desserts that I have had in my recipe box.  Both are pina colada flavored. They are both so delicious that we fight over the last bite. The cheesecake recipe was cut out of Southern Living years ago and the pound cake is from my grandma who is an amazing cook.  I love having it in her handwriting.

Here is a not very flattering picture of me taken in probably 2002 and my Pina Colada Cheesecake.

Pina Colada Cheesecake
6 T butter
1 3/4 c graham cracker crumbs
3/4 c toasted chopped pecans
1 T sugar
3 8 oz softened cream cheese
1/2 c sugar
5 eggs
1 8oz. drained crushed pineapple
1 c cream of coconut
1 c sour cream
1/3 c light rum
4 t coconut extract
Glaze
Garnish with toasted coconut & whipped cream

Glaze
1 T cornstarch
1 T water
1 8oz. crushed pineapple
1/4 c sugar
2 T lemon juice

Mix first 4 ingredients and press into the bottom and sides of a 10 inch springform pan.  Beat cream cheese & 1/2 c sugar then add eggs one at a time.  Mix in the nest 5 ingredients.  Then pour over crust.  Bake at 325 F for about an hour and 15 minutes or until the center is mostly set.  Now make glaze by first mixing the water and cornstarch together then adding the rest of the ingredients and cooking in saucepan until thickened.  Allow the glaze to cool.  Then spread glaze over the top of the cooled cheesecake.  Chill at least 8 hours then garnish.



I am visiting my cousin, Kandie, this weekend who my grandmother asked me to share this Pina Colada Pound Cake recipe with.  So, it's fitting to share them with you all today.  I hope you can read the recipe from the photos because I am doing this post via my iPhone.

Pina Colada Pound Cake
1 c butter
8 oz. cream cheese
3 c sugar
6 eggs
3 c all purpose flour
1/4 t baking powder
1/4 t baking soda
1/4 t salt
1 T vanilla
1 T Rum flavoring
1 T coconut flavoring
7 oz dried sweetened coconut
1 20oz. crushed pineapple drained well (save some for frosting)

Mix ingredients like any other pound cake.  Cream butter and sugar then add eggs one at a time.  Then gradually add dry ingredients.   Mix in the remaining ingredients.  Pour into greased tube pan.  Tap on counter to get out air bubbles.  Bake at 325 F for 90 minutes.  When cool you can frost it with a little powdered sugar mixed with pineapple juice, some coconut flavoring & a little rum flavoring.
