Make your own Calzone Night

I had made some fresh pizza dough the other day that I needed to use up.  We have had a lot of pizza & pizza bagels lately so I needed to do something else with the dough for dinner.  I decided to do a make your own calzone night!  The girls were so excited about it!  They helped me pull out all the miscellaneous ingredients that we had in the fridge.

We all had completely different concoctions.  I used my sourdough pizza dough recipe (find it HERE). Then these are the ingredients we all had to choose from:

chopped roasted chicken
bacon
prosciutto bits
spinach
shallots
mozzarella
colby monterrey jack
goat cheese
mushrooms
basil
pizza sauce
roasted green chiles
pine nuts

Then you just put what you want on the inside of your rolled out dough.  Fold it over and crimp the sides.  I baked them at 450 F for about 15-20 minutes.  Just watch for when it turns brown.

Andy wanted a supreme so I put just about everything in his.  I loved mine.  I put chicken, bacon, green chiles, pine nuts, mozzarella, goat cheese, basil, mushrooms and shallots.  (photo below)

They were delicious and even better the next day!  The kids loved being able to do it all by themselves too.  If you don't have time to make your own dough, the grocery stores have fresh dough (Safeway has some in the deli area) or you can get some at your local pizzeria.
