Eggless Sourdough Waffles

I have been experimenting with all types of recipes for my sourdough starter.  Some are wins and some are misses.  Most of the ones that don't turn out are ones that I find are online.  And most of the ones that aren't as good are the desserts.  But I am bound and determined to create my own win!  The difficult part comes from the eggs.  My daughter is allergic so I substitute with other things.  So that is also a huge factor of why my desserts aren't the best.

You don't have to worry about me posting mediocre recipes on here.  That is one peeve that I do have on blogs.  Their pictures will make it appear like it is amazing and so will there post.  But the results are not even close!  I make sure that the only recipes that I post are absolutely AMAZING!

So here is an easy and yummy Sourdough Waffle recipe that I make without eggs!  My family loves it when I make these.  It's also so easy because you can do it the night before.  The waffles are so hearty and have the most unique flavor.  You can't even tell that there are no eggs in this recipe.  We like to eat our waffles with peanut butter and maple syrup.  *Stay tuned for an upcoming blog post on collecting & making your own maple syrup.  It's almost time here in Montrose to tap your trees!



Eggless Sourdough Waffles
adapted from Nancy Silverton's La Brea Bread Bakery cookbook

1 cup milk
1/2 cup butter
1 cup sourdough starter
1 t salt
1 T honey
1 1/2 cup all-purpose flour

Night before: Making your sponge.  Melt butter in milk in saucepan.  Set aside and let cool down a bit.  Mix in a bowl the starter, salt, honey & flour.  Then mix in milk/butter mixture.  Cover and let sit out at room temperature overnight.

1/2 t baking soda
2 T flax seed meal
2T warm water

Next Morning: Mix flax seed meal & warm water in a little bowl and let it sit and gel for about 5 minutes while you preheat your waffle iron.  Sprinkle baking soda over your sponge then mix in the flax seed mixture.  Then proceed to cook up your batter on your waffle iron.  Make sure you spray the iron before putting on the batter.
