Healthy Packed Lunches beyond the Sandwich - Pasta

Pasta is such a great lunch to pack.  I love one dish meals.  It is so easy to pack because that's pretty much all you need!  Plus like soup, you can reuse leftovers to create a fabulous pasta dish.  Pasta only takes about 10 minutes to boil so it is easy to make the morning of.


Here are some of my packed lunch suggestions using pasta for you, your kids and your spouse.  What's so great about pasta is you can use these recipes as a guideline.  Throw in whatever you might have in the kitchen.  You can be as creative as you would like!



These two pastas (above & below) are pretty much the same except the above is bowtie and the one below is orzo.  I make this one A LOT!  It is so yummy.

Greek Pasta
chopped cucumbers or avocado
fresh chopped dill
fresh chopped parsley
fresh lemon juice
chopped tomatoes
feta cheese
chopped Chicken (optional)
s&p
splash red wine vinegar

Genoese Pesto Pasta with Green Beans & Potatoes

Gremelli pasta w/broccoli - Martha's variation of this dish

Penne Pasta with Butternut Squash & Ham

Tuna and Caper with Rice

Couscous Salad takes 5 minutes - add some chopped roast beef too
