Tuna Melt Salad

I have really got to get my butt in gear and follow my eating, drinking and exercising practices a little better.  Even though I have been doing better with all three, I have yet to lose a single pound since the new year.  Plus, my pants keep shrinking or something like that!!

Here's an easy lunch that is low in carbs and just hits the spot!  Plus, if you are making lunch for your kids or other people it is very easy to serve the tuna melts on a slice of toast instead of greens.





Tuna Melt Salad

1 avocado, cut in half, peeled and seeded
1/2 cup tuna
2 T olive oil mayo
1 t dijon mustard
dash Himalayan Salt (My new favorite thing)
dash pepper
slice colby jack cheese
salad greens
grape seed oil
rice vinegar


Mix in a bowl the tuna, mayo, mustard, salt & pepper.  Fill half in each open avocado.  Place cheese slice on top.  Broil in oven til cheese is melted.

Place greens on plate and drizzle with oil and vinegar.  Top it with your tuna melts.

Drink it with a bottle of Pellegrino.  YUM!!
