Sourdough Pizza

Last night I made the most delicious homemade pizza using my sourdough starter. It was a one day process but you could easily keep it in the fridge for several days and pull it out whenever you like. It is best to give it several hours out of the fridge to proof but I have read that it still works pretty good if you don't have too much time.

Sourdough Pizza Dough:

2 cups starter
2 cups all-purpose flour
2 t salt

I mixed the flour and starter together until it was a good dough that wasn't sticky and made a nice smooth ball. Cover it and let it rest for about 15 minutes. Add salt and knead for about 5 more minutes.

Oil your bowl and top of dough. Cover good and stick in the fridge until you are ready for it to proof. Allow 3 hours in a warm spot. After it has risen knock it down and divide it into two balls. Lightly flour surface and roll dough out for pizza.

Preheat oven to 450 F with pizza stone in the oven. Oil bottom of pizza stone before placing dough on top. Then quickly add your toppings and bake for about 13-16 minutes.

I put kalamata olives, mozzarella, sauce, goat cheese, olive oil and basil on one. On the other I put sauce, olive oil, mozzarella, Gouda, and basil.
