Cinnamon Swirl Pancakes - Egg Free

I saw these fun cinnamon swirl pancakes on Pinterest & I knew that we were going to have them the next morning!  They were pretty easy & delicious.  I just ate mine with butter.




I used my standard go to {Egg Free/Vegan} Pancake recipe.


1 1/4 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups water
1 tablespoon oil

They are so light & fluffy.  When I have buttermilk or almond milk then I use that instead of water.  Also, I saw a really cool idea of freezing buttermilk in large ice cubes.  I don't know about you but I can never use a whole quart when I buy it.

Cinnamon Swirl

1 stick of butter
1 cup brown sugar
2 Tbs cinnamon

Melt in the microwave or in a small saucepan.  Then, transfer to a ziploc bag.  Snip off the corner & swirl on pancakes before you flip them.  You can serve them with butter, cream cheese icing or syrup.

  1. I always forget to buy buttermilk, not to mention that when I do, I never finish it either! Have you ever made your own buttermilk? I think its 1 Tablespoon of cider vinegar or lemon juice and then add milk to make 1 cup of "buttermilk". I've done it in a pinch, but I'm wondering what a pro thinks of that? I'm guessing it would work with almond milk, too...

    1. I do make my own buttermilk in a pinch but it just isn't the same in a recipe like this that has very few ingredients. I am going to try the frozen cube idea!!

    2. Now that I'm 2 seconds from the grocery store, I don't have too much of an excuse and you're spot on with freezing the leftovers!
